Long-Simmered Beef

Health: Don't get thirsty.
                                Long-Simmered Beef
                          A delicious Chinese dish
                                  Ingredients
       Shin of beef    1 kg        Vegetable oil    5 tablespoons
        Castor sugar   2 tablespoon      Soy sauce   3 tablespoons
       Dried tangerine  (orange peel, dried) 1 tablespoon  
       Spring onion    6 chopped     Ginger   2 tablespoons fresh
        Apple vinegar  4 tablespoons

                                    Method
     Trim the beef and cut into 1 inches cubes.Stir fry in the oil           for 4 to 5 minutes over medium heat.Drain the beef , add to a pan of boiling water and boil for 3 minutes. remove the beef and drain.
         Place the beef in a heavy saucepan and barely cover with fresh cold water. Add the sugar, soy sauce, apple vinegar, dried 
orange, onion and ginger. Lower the heat as far as possible and simmer,lightly covered, for 4 hours. Stir the contents of the pan once each hour. 
        Transfer to a heated dish before serving.
