Fried Potato Chips

                           Fried Potato Chips

                                Real fried potato chips
                          
                    Ingredients


Potatoes          ½ kg              Chili pepper     4
             
Vegetable oil      1 cup

Onion     1(Chopped)          Soy sauce        1 tablespoon 

       Salt        ½ teaspoon Vinegar       1 ½ teaspoon 

                        Method  
Peel the potatoes and cut lengthwise into thin slices. Place the slices on top of each other and cut into long, matchstick-thin chips. Simmer the chips in boiling water for 2 minutes and drain. De-seed and chop the chili pepper.
            Heat the oil in a frying pan over high heat. Saute the chili pepper in it for 15 second, then add the onion and sauce for another 30 second. Discard the pepper and onion. Add the potato chips. Toss and turn the chips in the oil for 3 minutes. Add the soy sauce, salt and vinegar. Continue to stir-fry, but more gently, for 1 minute and then drain on absorbent kitchen pepper.
                              Well heated serving dish
