Fine Adriatic Pizza

                                         This pizza variation is packed with protein

Ingredients:

  1.   Large tomatoes                                         2, peeled and chopped
  2.    Garlic clove                                             1,chopped
  3.    Beef slices                                               3 chopped
  4.    Anchovy fillets                                        200 g  
  5.    Black olives                                            1/2 cup
  6.   Fresh parsley                                           1 tablespoons
  7.   Fresh bay leaves                                      1/2 cup
  8.   Precooked pizza shell                                  
  9.   Mozzarella                                              1 cup, grated
  10.   Freshly ground pepper
  11.   Pizza sauce                                             2 tablespoons
  12.   Green pepper                                         1,chopped

Method:

In a nonstick pan heat beef slices and garlic together,until beef is cooked Drain of fat.

Stir in anchovy and pepper to taste.Stir in tomatoes,olives,parsley,green chili and bay leaves.

Brush the rim of pizza with the pizza sauce. Spread mixture over pizza shell.

In a preheat oven to 180 degree C. bake 15 minutes.

Top with grated mozzarella towards end of cooking time.

Tasty Spaghetti Alfredo

                         This is an easy dish to make

Ingredients:

  1. Unsweetened Apple juice                         2 tablespoons
  2. Chicken powder                                       1 tablespoon
  3. Cream                                                       1 cup
  4. Parmesan cheese    (grated)                    1/2 cup
  5. Diced cooked chicken ham                     1 cup
  6. Spaghetti,cooked and drained                500 g
  7. Chili sauce                                              2 tablespoons
  8. Soy sauce                                                2 tablespoons
  9. Ketchup                                                   2 tablespoons
  10. Fresh parsley                                         handful 

Method:

Heat cream in a saucepan with unsweetened apple juice,chili sauce,soy sauce,ketchup and chicken powder over medium low heat about 6 minutes.

Stir in grated cheese until melted.Add ham and reduce heat to low.
Add drained spaghetti to mixture and toss well.Sprinkle with parsley to serve.

Spicy Barbecued Beef

                                 A combination of spice and taste

Ingredients:

  1. Lean boneless beef loin                   750 g 
  2. Hot sauce                                         2 tablespoon
  3. Curry powder                                 4 tablespoon
  4. Vegetable oil                                    3 tablespoon
  5. Spring onion                                   2 chopped
  6. Dried red chili  flakes                    2 tablespoon
  7. Lemon juice                                   2 tablespoon
  8.  Salt & pepper 
  9. Honey                                            1 tablespoon
  10. Garlic cloves                                 4,finely chopped

Method: 

   Cut beef into strips.

In a bowl combine all ingredients.Mix well and stir in beef strips,covered and let marinate  3 to 4 hours in the refrigerator.

Drain beef strips and thread them onto skewers lengthwise.

Place skewers on a plate and baste them on both sides with oil.

Barbecued 6 to 10 minutes on a preheated grill.Baste with marinade during cooking.Serve with rice.

Ingredients:

  1. Beef sausage cooked                       6
  2. Fresh spinach                                125 g (steamed & drained)
  3. About 4 inches square ready-made puff pastry         6
  4. Egg                                                 2(beaten)
  5. Salt                                                 as required
  6. pepper                                            1/2 teaspoon
  7. Hot chili sauce                              1 tablespoon
  8. Olive oil                                         2 teaspoon
  9. Worcestershire sauce                    1 teaspoon

Method:

Place cooked sausage in food processor with two eggs,hot chili sauce,olive oil,Worcestershire sauce and cooked spinach.Season with salt and pepper.Process to make a paste.

Spread mixture over squares of puff pastry.Fold each square in half.

Preheat oven to 200 degree C.Place pastry packages on a baking sheet.Bake about 20 minutes or until browned.

Serve with tomato ketchup.

Ingredients:

  1. Icing sugar                                   1 cup
  2. Egg yolks                                           4
  3. Egg whites                                         4
  4. Strong brewed coffee                 1 tablespoon
  5. Bittersweet chocolate                150 g
  6. All-purpose flour                      3 tablespoons
  7. Cinnamon                                 a pinch
  8. Baking powder                         1 teaspoon
  9. Ground almonds                      4 tablespoons
  10. Melted butter                           1 cup 

Method: 

In a bowl beat together eggs yolks with icing sugar,beating until smooth,set aside.
In hot water melt chocolate,stir in coffee.Pour chocolate mixture over egg yolks.Add flour,cinnamon,baking powder,almonds and butter.Mix well, the batter will be thin.

Beat egg whites to stiff and fold gently into chocolate mixture.
Preheat oven to 200 degree C.Grease the cake pan.

Pour the batter into preheated pan.Bake 25 minutes.
Let cool before serving.Sprinkle with icing sugar.

Ingredients:

  1. Beef sausages                       500 g
  2. Tomato ketchup                   3 tablespoons
  3. Dijon mustard                     2 teaspoons
  4. Cooking oil                         3 tablespoons
  5. Worcestershire sauce        1 teaspoon
  6. Salt                                     to taste
  7. Chili sauce                         1 teaspoon
  8. Pepper                                1/2 teaspoon
  9. Lemon juice                      1 tablespoons

Method:
Pierce the skin of the sausages with the prongs of the fork.
Arrange them in one layer in a ovenproof dish.
Mix together the oil,ketchup,mustard,chili sauce,lemon juice and Worcestershire sauce.
Season with salt and pepper and pour this marinate over the sausages.Cover and place in the refrigerator for 2 hours,turning 
them occasionally.
Bake the sausages in a preheated oven at 200 degree C for 25 minutes,basting frequently until the sausages are well browned.
Serve hot.

  1. Unsweetened cocoa powder  4 tablespoons
  2. Strong hot coffee                  3 cups
  3. Ground cinnamon               1/2 teaspoon
  4. Grated orange zest               1 teaspoon
  5. Vanilla ice milk                   2 cups
  6. Cocoa powder                     for garnish
  7. Canned whipped cream     for garnishing

Method:

Dissolve cocoa powder in hot coffee.Stir in cinnamon and grated orange zest.Refrigerate to cool.
Place coffee mixture together with ice milk in food processor or blender.Process until smooth and creamy.Pour at once into chilled cups or glasses,and top with whipped cream and sprinkle over cocoa powder.

Ingredients:

  1. Salmon steaks     6                  
  2.  Fresh orange juice    2 tablespoons
  3. Orange zest(grated)    2 teaspoons        
  4.  Honey         2 teaspoons
  5. Fresh lemon juice    2 tablespoons      
  6. Vegetable oil  4 tablespoons 
  7. Onion  1 (grated)
  8. Worcestershire sauce 1/2 teaspoon
  9. Fermented chili pepper crushed  2 teaspoons
  10. Salt   to taste


Method:

Arrange salmon in a single layer in a dish.

In a bowl mix all ingredients well and pour over salmon.Cover with a sheet of plastic wrap and let marinate in refrigerator at least 2 hours,during marination turning steaks once.
Cook on an oiled,preheated barbecue grill 7 to 8 minutes.
Baste with marinade during cooking.

Ingredients:

Fresh lemon juice  2 tablespoons         Mustard         1 tablespoon
Boneless lamb        500 g(in cubes)     Vegetable oil   3 tablespoons
  Tomatoes              2 slices                     Onion    1  (cut in round)
Breadcrumbs     1/2 tablespoon             Garlic powder   1 teaspoon
Ginger  powder    1/2 teaspoon              Paprika    chopped
Salt     to taste


Method:

Toss together lamb cubes in a bowl with mustard,lemon juice,oil,
ginger powder,garlic powder,salt and paprika.let marinate for 5
hours.
Thread lamb cubes,tomatoes slices and onion onto skewers.
Roll in breadcrumbs.
Preheat oven to 400 degree F.Place  brochettes on a broiler pan. Cook about 30 minutes.
Serve with salad and mint chutney.

Ingredients:

Cauliflower florets    1/2 cup              Broccoli florets   1/2 cup
Mushrooms,quartered   1 cup            Beef slices   4
Olive oil    2 tablespoons                     Precooked pizza shell   1
Swiss cheese   1 cup  grated               Butter   4 tablespoons
all purpose flour   1/2 cup                 Skim milk  2 cups
Salt                                                   Pepper     1 teaspoon
Nutmeg    ground   a pinch               Sun dried tomatoes

Method:

Cook broccoli and cauliflower in boiling salted water until tender.
drain and set aside.

Cook mushrooms in olive oil until lightly browned.set aside.

For white sauce in a saucepan heat the butter ,stir in flour,mixing well.Cook one minute,gradually stir in milk and nutmeg.Cook until thickened.Pour into a bowl and let cool.

Preheat oven to 400 degree F.Cook beef until crisp,crumbled and
set aside.

Spread cooled white sauce over pizza shell.Top with vegetables,sun dried tomatoes,grated cheese and cooked crumbled beef.Bake 10 minutes.
Serve hot.

Super Chicken Burgers

Ingredients:

Ground chicken     500 g                        Paprika     3 tablespoons
Curry powder      4 tablespoons                    Salt      to taste
Parsley ground 1 tablespoon                        Garlic     1 teaspoon
Spring onion(chopped) 1 tablespoon             cheese slices 4
Freshly ground pepper   1 teaspoon              Water     1 tablespoon


                                           

Method:

In a bowl sprinkle water with chicken and mix gently. Shape chicken into 4 patties. Set aside.

In another bowl mix paprika,curry powder,garlic,spring onion,salt,parsley and pepper to taste. Coat patties on both sides in spicy mixture.

After 10 minutes cook patties on oiled,preheated barbecue grill 8 to 9 minutes on each sides.

serve on toasted hamburger buns with cheese slices and garnish
with lettuce leaves,tomatoes slices,cucumber slices,and sprinkle over french fries.

Ingredients:

   Onion  2(small) sliced                            Olive oil   5 tablespoons
  Baps    5(large)                                 Mushrooms  60 g                      tomatoes   3                                     Cheese 180 g          
  Salt     to taste                               Black pepper 1/2 teaspoon
Chicken fillets   10


Method:

Slice the baps in half and brush the surface with olive oil. cook the onion in olive oil until soft, add the sliced mushrooms and cook for another 2 minutes. 

Slice and arrange the tomatoes on top of the bap halves,season with salt and pepper.Spoon the onion and mushroom mixture on top and cover with cheese, arrange the chicken fillets on the cheese.
Bake the pizza baps in a preheated oven at 180 degree C for 25 minutes or until the fillets are golden brown.

Hot mustard    1 tablespoon         
Fresh parsley   2 tablespoons(chopped )        Salt     to taste 
 Melted butter   1 tablespoon 
                       

Method:

In a  bowl combine all ingredients and mix well except melted butter.

Brush 10 muffins molds with melted butter. Spoon ham mixture into molds.
Bake in preheated oven to 180 degree C about 25 minutes or until golden brown.

Ingredients:

Potatoes,scrubbed   6                   Vegetable oil         130 ml
Salt          to taste                          Black pepper         1 teaspoon
Dried chili    crushed                   Garlic powder       1/2 teaspoon
 

Method:    

Wrap each potato in foil and bake 50 minutes at 180 degree C .

Cut each potato in half lengthwise and scoop out flesh.Set aside potato flesh for another use.

Cut potato skins into strips.Stir red chili, garlic powder and salt into oil.Dip potato skins into mixture.

Arrange potato skins on a baking sheet and place under preheated broiler for 5 to 8 minutes, turning potato skins time to time. Sprinkle with black pepper and serve hot  with ketchup and mayonnaise.

Ingredients:

Thick white fish fillets   1000 g          Garlic  5 cloves chopped
Red chilies  1 teaspoon                        Onion        1   chopped
Coriander    1 teaspoon  ground         Cooking Oil        60 g
 Turmeric  1/2 teaspoon ground         Mustard seed  1/2 teaspoon
Rice flour   1/2 teaspoon                     Coconut milk  350 ml
Salt     to taste                                       Lemon juice 
Yogurt   2 tablespoons 

Method: 

Cut the fish fillets into small pieces. Heat the oil in a large pan and fry the onion until it is soft.Add the garlic, red chilies, ground coriander, turmeric,yogurt and mustard seeds.Stir the mixture and reduce the heat.

In coconut milk mix the rice flour well then pour it over the contents in the pan, stirring continuously.Bring the mixture to boil.Add the lemon juice and season to taste with salt.

Reduce the heat to simmer the sauce gently, add the pieces of fish
and cover the pan.Simmer for 10 minutes or until the fish is cooked.

Cheese Macaroni with Chicken Ham

ingredients:

Macaroni   250 g           Cheddar cheese   180 g    grated
Tomatoes   4    chopped       Chicken hem        125 g  cooked, diced
Fresh white breadcrumbs    3 tablespoons    Salt   to taste
Black pepper   1 teaspoon      Butter    50 g  melted
White sauce    500 ml             Parsley  

  

Method:

Cook the macaroni, in salted boiling water for about 20 minutes.
Stir two-thirds of the cheese into the white sauce, season to taste.
Drain the macaroni and mix it into the sauce with ham,black pepper, parsley and tomatoes.
Spoon the mixture into a buttered ovenproof dish. Mix the rest of the cheese with the breadcrumbs. Sprinkle over the macaroni, and pour the melted butter over. Bake in a preheated oven at 200
degree C until the top is crisp and golden.
Serve hot.

Ingredients:

Chicken   8 drumsticks            garlic       4  cloves  
Salt          to taste                     Black pepper    1/2 teaspoon
Fresh breadcrumbs       60 g       Lemon juice    1 tablespoon
Paprika   1 teaspoon                   Honey    40 ml                  

Method:

Crushed  the garlic and mix it with  breadcrumbs, lemon juice, salt, paprika and pepper.

Brush the pieces of chicken with honey. and then dip into the 
crumb mixture. pressing the crumbs on firmly.

 Place on a baking sheet and cook in a preheated oven at 190 degree C for 30 minutes, or until the coating is crisp and the chicken is cooked.

 Crab meat, Shredded       250 g         Wholewheat bread   5 slices
Spring onion finely chopped      4      Mayonnaise   4 tablespoons
Lemon juice    2 teaspoons         Garlic chili sauce   2 tablespoons
Paprika    1 teaspoon                  Lettuce leaf             Celery  
Mango      1          peeled,pitted and sliced   Salt      to taste




                                     Method

In a bowl combine crab meat,spring onion, mayonnaise, garlic chili sauce,celery, lemon juice, salt and paprika. Season to taste. Set aside.
Cut bread and garnish with lettuce. 
Arrange crab mixture on top.
Arrange mango slices over crab mixture and baked until puffed 
about 8 minutes.

                                 Ingredients

 Egg yolks     3                        Cornstarch      2 tablespoon
Cream cheese     2 cup           Sugar             6 tablespoons
Apple    5                                Egg whites         3
Butter        125 g tablespoons       Caster sugar    2 tablespoons
Cocoa powder   2 tablespoons     Orange juice    4   tablespoons

Method
Beat together the cream cheese, cornstarch, egg yolks. orange juice and sugar until smooth.
Peel and slice the apples, whisk the egg whites until stiff and fold into the cream cheese mixture.
Butter the gratin dish. fill with the cream cheese mixture and smooth the top. Arrange the apple slices on top.
Bake in a preheated oven at 500 degree F until they are golden brown. Remove the gratin from the oven. Mix together caster sugar and cocoa powder and sift over the dessert. Serve hot.

In a frying put the orange juice and zest,sugar and butter,lemon juice over a low heat and cook for 2 minutes. 
 Care fully fold a pancake in half and then in half again, and push it towards the side of the pan,repeat with the remaining pancakes.Sprinkle over them honey.You can take it as a breakfast and dessert meal.

Baked Chicken Ham & Eggs

 Chicken thin ham    250 g       Butter    75 g
 Spring onion  1   sliced         Spinach leaves    handfuls
Tomatoes 400 g   chopped       Paprika   1 teaspoon
Cheddar cheese   125 g     grated       Salt  to taste
Black pepper   1 teaspoon    Mustard      1 teaspoon
Garlic powder    1 teaspoon     Eggs      5


                                  Method

Preheat oven to highest setting and smear butter over oven proof 
dish.
Fill the dish with a combination of chicken ham,spring onion, Spinach leaves, mustard, chopped tomatoes and paprika.
Boil the eggs and cut into half, pour over the top of the dish, followed by the grated cheese, then season well with salt,black pepper, garlic powder.Bake for 15 minutes.

Sweet Raspberry Cheesecake

                                    Ingredients

 Raspberries       350 g (crushed)        Cream cheese  260 g
 Heavy cream     130 ml (softly whipped)   Butter   60 g
 Digestive biscuits   260 (crushed)  Mascarpone cheese 260 g
Condensed  milk  150 ml   
                                   Method 
Mix  the butter, biscuits and 3 tablespoons condensed milk.
Smooth them with a knife and chill for 40 minutes.
           Beat the cream until smooth. Add the remaining
milk and beat until thick. Fold in the raspberries and cream.
Pour over the chilled biscuits base or chill for 6-7 hours or 
until mixture set.

Damson Cloud Cake

                                    Ingredients

             Damsons      450 g         Fine flour     85 g
            Milk              2 cup     Sugar cane juice    2 tablespoons
           Egg whites    4               Sugar       85 g
          Butter        2 tablespoons


   Method

 Wash and halve the damsons and remove the stone,set aside.
Sift the flour into a large bowl. Make a well in the center ,add the egg yolks and a pinch of salt.
 Mix thoroughly and stir in enough milk to obtain a thick, creamy mixture. Add the sugar cane juice and mix well.
Whisk together the egg whites and sugar until very stiff and fold

into the mixture. Carefully fold in the damsons.
Butter a spring form cake pan half the butter and spoon in the mixture.
Dot with the remaining butter and bake in a preheated oven at 350 F degree for 40 minutes.
              Serve warm.

    Stewing beef      500 g            Tomatoes     500 g
    Salt   1 tablespoons             Freshly ground black pepper
   Water    7 cups                    Garlic    8 cloves
   Ginger paste     1 teaspoon       Red chili  1 teaspoon
   Turmeric        1/2  teaspoon     Fresh coriander     handful
    Vegetable Oil     1/2 cup            Onion      2 chopped



                                       Method

Cut the beef into 1 inches pieces. Place in a pan with boiling water to cover and boil for 3 minutes. Drain.Cut the tomatoes
 into pieces. Heat the oil in a pan, add onion and stir fry until light brown.Place the tomatoes and beef in it and pour in ,red chili, garlic cloves, ginger paste and turmeric, stir fry until tomatoes are softened.Pour in the measure water Start boiling 
on a low heat.Simmer gently for two hours.Add black pepper 
and fresh coriander to taste 4 minutes before serving.Pour into a bowl and serve.
                                  Serve with rice

Orange Apple Salad

                                Ingredients
       Apple        2       Raisins  2 tablespoons     Oranges   4
      Brown sugar 2 tablespoons     Grapes   1 cup
      Cinnamon a pinch     Almonds   flaked   2 tablespoons
      Apple juice  1 cup



                                          Method
    Peel the oranges and apples,remove all the white parts. 
    Cut into segments with a sharp knife and remove the                       membrane. Place in a large serving bowl.
    Chop the dates and place in the bowl with the oranges and
   apples. Stir in the sugar,grapes, apple juice and the yellow             raisins. Set aside to macerate for two hours.Meanwhile, 
  lightly toast the almonds in a dry skillet. 
 Sprinkle the salad with the cinnamon and toasted almonds
    and serve.
