Top Moka Cake
A sweet combination of chocolate and coffee
Ingredients:
- Icing sugar 1 cup
- Egg yolks 4
- Egg whites 4
- Strong brewed coffee 1 tablespoon
- Bittersweet chocolate 150 g
- All-purpose flour 3 tablespoons
- Cinnamon a pinch
- Baking powder 1 teaspoon
- Ground almonds 4 tablespoons
- Melted butter 1 cup
Method:
In a bowl beat together eggs yolks with icing sugar,beating until smooth,set aside.
In hot water melt chocolate,stir in coffee.Pour chocolate mixture over egg yolks.Add flour,cinnamon,baking powder,almonds and butter.Mix well, the batter will be thin.
Beat egg whites to stiff and fold gently into chocolate mixture.
Preheat oven to 200 degree C.Grease the cake pan.
Pour the batter into preheated pan.Bake 25 minutes.
Let cool before serving.Sprinkle with icing sugar.
