Mango Crab Canapes

Health: Seafood is high in protein.

                                    Ingredients

 Crab meat, Shredded       250 g         Wholewheat bread   5 slices
Spring onion finely chopped      4      Mayonnaise   4 tablespoons
Lemon juice    2 teaspoons         Garlic chili sauce   2 tablespoons
Paprika    1 teaspoon                  Lettuce leaf             Celery  
Mango      1          peeled,pitted and sliced   Salt      to taste




                                     Method

In a bowl combine crab meat,spring onion, mayonnaise, garlic chili sauce,celery, lemon juice, salt and paprika. Season to taste. Set aside.
Cut bread and garnish with lettuce. 
Arrange crab mixture on top.
Arrange mango slices over crab mixture and baked until puffed 
about 8 minutes.

Apple Fruit Gratins

                                 Ingredients

 Egg yolks     3                        Cornstarch      2 tablespoon
Cream cheese     2 cup           Sugar             6 tablespoons
Apple    5                                Egg whites         3
Butter        125 g tablespoons       Caster sugar    2 tablespoons
Cocoa powder   2 tablespoons     Orange juice    4   tablespoons

Method
Beat together the cream cheese, cornstarch, egg yolks. orange juice and sugar until smooth.
Peel and slice the apples, whisk the egg whites until stiff and fold into the cream cheese mixture.
Butter the gratin dish. fill with the cream cheese mixture and smooth the top. Arrange the apple slices on top.
Bake in a preheated oven at 500 degree F until they are golden brown. Remove the gratin from the oven. Mix together caster sugar and cocoa powder and sift over the dessert. Serve hot.

   Zest   of    2 orange        Orange juice    5 tablespoons

                                       Method  
In a frying put the orange juice and zest,sugar and butter,lemon juice over a low heat and cook for 2 minutes. 
 Care fully fold a pancake in half and then in half again, and push it towards the side of the pan,repeat with the remaining pancakes.Sprinkle over them honey.You can take it as a breakfast and dessert meal.

Baked Chicken Ham & Eggs

                             Ingredients
 Chicken thin ham    250 g       Butter    75 g
 Spring onion  1   sliced         Spinach leaves    handfuls
Tomatoes 400 g   chopped       Paprika   1 teaspoon
Cheddar cheese   125 g     grated       Salt  to taste
Black pepper   1 teaspoon    Mustard      1 teaspoon
Garlic powder    1 teaspoon     Eggs      5


                                  Method

Preheat oven to highest setting and smear butter over oven proof 
dish.
Fill the dish with a combination of chicken ham,spring onion, Spinach leaves, mustard, chopped tomatoes and paprika.
Boil the eggs and cut into half, pour over the top of the dish, followed by the grated cheese, then season well with salt,black pepper, garlic powder.Bake for 15 minutes.

Sweet Raspberry Cheesecake

                                    Ingredients

 Raspberries       350 g (crushed)        Cream cheese  260 g
 Heavy cream     130 ml (softly whipped)   Butter   60 g
 Digestive biscuits   260 (crushed)  Mascarpone cheese 260 g
Condensed  milk  150 ml   
                                   Method 
Mix  the butter, biscuits and 3 tablespoons condensed milk.
Smooth them with a knife and chill for 40 minutes.
           Beat the cream until smooth. Add the remaining
milk and beat until thick. Fold in the raspberries and cream.
Pour over the chilled biscuits base or chill for 6-7 hours or

Damson Cloud Cake

                                    Ingredients

             Damsons      450 g         Fine flour     85 g
            Milk              2 cup     Sugar cane juice    2 tablespoons
           Egg whites    4               Sugar       85 g
          Butter        2 tablespoons


   Method

 Wash and halve the damsons and remove the stone,set aside.
Sift the flour into a large bowl. Make a well in the center ,add the egg yolks and a pinch of salt.
 Mix thoroughly and stir in enough milk to obtain a thick, creamy mixture. Add the sugar cane juice and mix well.
Whisk together the egg whites and sugar until very stiff and fold

into the mixture. Carefully fold in the damsons.
Butter a spring form cake pan half the butter and spoon in the mixture.
Dot with the remaining butter and bake in a preheated oven at 350 F degree for 40 minutes.
              Serve warm.

Spicy Tomato Beef broth

                                   Ingredients

    Stewing beef      500 g            Tomatoes     500 g
    Salt   1 tablespoons             Freshly ground black pepper
   Water    7 cups                    Garlic    8 cloves
   Ginger paste     1 teaspoon       Red chili  1 teaspoon
   Turmeric        1/2  teaspoon     Fresh coriander     handful
    Vegetable Oil     1/2 cup            Onion      2 chopped



                                       Method

Cut the beef into 1 inches pieces. Place in a pan with boiling water to cover and boil for 3 minutes. Drain.Cut the tomatoes
 into pieces. Heat the oil in a pan, add onion and stir fry until light brown.Place the tomatoes and beef in it and pour in ,red chili, garlic cloves, ginger paste and turmeric, stir fry until tomatoes are softened.Pour in the measure water Start boiling 
on a low heat.Simmer gently for two hours.Add black pepper 
and fresh coriander to taste 4 minutes before serving.Pour into a bowl and serve.
                                  Serve with rice

Orange Apple Salad

                                Ingredients
       Apple        2       Raisins  2 tablespoons     Oranges   4
      Brown sugar 2 tablespoons     Grapes   1 cup
      Cinnamon a pinch     Almonds   flaked   2 tablespoons
      Apple juice  1 cup



                                          Method
    Peel the oranges and apples,remove all the white parts. 
    Cut into segments with a sharp knife and remove the                       membrane. Place in a large serving bowl.
    Chop the dates and place in the bowl with the oranges and
   apples. Stir in the sugar,grapes, apple juice and the yellow             raisins. Set aside to macerate for two hours.Meanwhile, 
  lightly toast the almonds in a dry skillet. 
 Sprinkle the salad with the cinnamon and toasted almonds
    and serve.

Crystal Chicken

          Chicken   1 kg      Chicken ham  4 slices cooked
         Salt    1 teaspoon    Apple vinegar  3 tablespoons
        Gelatin powder  25 g     Chicken stock  4 cups

  Chicken Stock

                             In a big pan take bones and carcass from the  chicken and water, half of the pan.Simmer on very low heat for two hours, after two hours add salt, onion, garlic cloves,soy sauce and again simmer on very low heat for 2 hours.You should just see a few bubbles here and there, a little movement in the liquid.
You can refrigerate for one week.


 Crystal Chicken 
       Clean the chicken thoroughly and dry. Place the chicken
in a saucepan, cover with water, bring to the boil for 30 minutes.
Drain and when cool, chop the chicken into  pieces. Cut the ham into similar sized pieces.Arrange the pieces of chicken and
chicken ham in a dish.
   Add the salt , apple vinegar, gelatin powder to the stock.Heat the stock  mixture in a pan. stirring, the ingredients are well mixed.Cool for 10 minutes and then pour over the chicken and chicken ham.Cook until thick layer appear on the top of the chicken.
                     Arrange some colorful vegetables such as green pepper and fresh coriander and ginger strips.

Steamed Beef in Cornflour

                                           Ingredients
    Beef tenderloin 750 g       Fresh ginger  1 tablespoon  chopped
    Vegetable oil   2 tablespoons       Chili sauce   1 teaspoon
    Sugar  2 teaspoon         Soy sauce   2 tablespoons
   Cornflour    1 cup         Coriander seeds   1/2 teaspoon
   Bay leaves    1/2 teaspoon       Fresh thyme   1/2 teaspoon
   Apple vinegar  1 tablespoon




                                           Method

Cut the beef into very small pieces. Prepare the ginger water by boiling the ginger in the water over low heat for 3 minutes, then 
strain, place the meat in a bowl and add the ginger water,oil, soy sauce, apple vinegar, sugar and chili sauce. Mix well.
                Use cornflour to coat the pieces of beef.
Divide the meat between two ovenproof dishes. To the first bowl
add coriander seeds and a few chives, to the second,add a little thyme. Place the bowls in a steamer cover and steam 30 minutes.
                             Serve with rice

      Beef                       1 kg                  Soy sauce  2 teaspoons       
      Black pepper         1 teaspoon      ( freshly ground)
      Apple vinegar       2 tablespoons    Cabbage    125 g
      Vegetable oil         for deep frying     Salt     to taste



                                           Method  
       Boil the beef until tender. Drain. Heat the oil and deep fry 
      for 10 minutes. Drain, cool and cut into 1* 2 inches slices.           arrange the pieces on a plate and add the apple vinegar, soy          sauce, salt and black pepper to taste. Marinate for 10 minutes.                 Arrange the beef in a large ovenproof bowl. Chop the 
     cabbage and place over the beef. Cover and steam for 30               minutes.
                              Serve with rice.

White Chocolate Mousse With Cream

                                        Ingredients
     White chocolate   150 g         Egg white  2
     Pineapple juice   2 tablespoons   Sugar    2 tablespoon
     Lemon juice     1 teaspoon           Heavy cream   1 cup
     Grated rind of orange 

  
                                               Method
  Break the chocolate into small pieces and place in a microwave- safe dish.Add the cream. pineapple juice, and orange peel, and cook on high for 2-3 minutes. 
 Remove the chocolate from the oven and stir until it has completely melted. Set aside to cool, then chill in the refrigerator for overnight.
                   Remove the chocolate and cream mixture from the refrigerator  and set aside for 30 minutes at room temperature
Beat well until very frothy.
                  Whisk the egg white until stiff, gradually whisking 
in the sugar and lemon juice. Carefully fold the egg white into
the chocolate cream divide equally between 3 dishes and serve.

      Chicken drumsticks    6-8     (about 725 g)
   Sesame seeds   25 g       Sesame oil   1 1/2 teaspoons
   Soy sauce   2 tablespoons       Caster sugar   2 teaspoons
   Chili sauce  1 tablespoon     Vinegar   1 tablespoon
   Freshly ground black pepper  1/2 teaspoon
    Spring onion    6-8        Salt     a pinch



Raw drumsticks
Method 
Cook the drumsticks in boiling water to cover for 20 minutes, allowing 3 minutes boiling and 15 minutes simmering time.
  Drain and cook for 10 minutes. Remove the meat from the drumsticks and slice each piece diagonally into four pieces.
 Stir fry the sesame seeds gently in a pan over low heat until they are turning golden and beginning to crack.
  In a mortar add sesame seeds and sesame oil to make sesame  paste,
 mix this paste with the soy sauce, 
sugar, vinegar, chili sauce and pepper.
           Chop the  spring onion,and pile them in the center of a heated serving dish.Arrange the pieces of chicken around the edge by overlapping them. Pour the sesame paste mixture evenly over the chicken and sprinkle the crispy, dry sesame seeds on top before serving.

                                Ingredients
    Juicy pears   2               Lemon juice   2 teaspoons
    apple juice     1/2 cup           Fresh cream     1 cup
    Strawberry  1 cup        Yogurt    1 cup     Peach    1 cup
   Confectionery sugar   2 teaspoons




                                          Method
     Peel, halve and core the pears, and cut into thin slices.
    Arrange the slices in a serving bowl, and squeeze over the              lemon juice.
              Wash, halve and seed the peach, strawberry and                   grapes.Add them to the pears.
  Stir in the apple juice sweeten to taste and fresh cream, 
  cover and refrigerator for 30 minutes.
                      Serve sprinkle with sugar.

Fantastic Egg Rolls

                                    Ingredients
    Thinly sliced smoked chicken     225 g
    Eggs     3   boiled and chopped
    Tartary sauce      2 tablespoons
    Fresh parsley      handful
                                     Tartary sauce
             Mayonnaise  1 cup       Lemon juice  1 teaspoon
          parsley 1 tablespoon   finely chopped
          Sugar   1 teaspoon       Black pepper  1/2 teaspoon   ground
         Onion   1 (small) chopped
                   Mix all of these ingredients together in a bowl and 
    refrigerator  until needed.




                                     Method
   
     Chop the smoked chicken finely and put it in a 
     bowl with the hard boiled eggs. Stir in the tartare sauce
   to bind the mixture together.
                             Take wrappers, before rolling, brush each
   sheet with melted butter.Place the filling diagonally on the 
   wrap. Pour the tartare sauce mixture and parsley, fold the            bottom corner over the filling half way, then fold the sides
  towards the center to cover the filling.
               Heat the oil in a frying pan and fry until golden
  brown.Drain and serve with ketchup.
