Ingredients:

For the Lamb Kebabs:
500g ground lamb
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili flakes (optional)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Wooden skewers (soaked in water for 30 minutes)
For the Mint Sauce:
  • 1 cup fresh mint leaves
  • ½ cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Instructions:

Preparing the Lamb Kebabs:
  1. In a large bowl, mix together the ground lamb, chopped onion, minced garlic, parsley, cumin, coriander, paprika, chili flakes, salt, and pepper.
  2. Divide the mixture into 8 equal portions and shape each into a long kebab shape. You can use skewers to hold them or shape them into patties if preferred.
  3. Heat olive oil in a grill pan or on a barbecue over medium heat. Cook the kebabs for about 6-7 minutes per side or until browned and cooked through. Make sure to rotate them evenly for a nice sear.
Preparing the Mint Sauce:
  1. In a blender or food processor, combine the mint leaves, yogurt, lemon juice, garlic, salt, and pepper. Blend until smooth and creamy.
  2. Taste and adjust seasoning if necessary.
Serving:
  1. Serve the lamb kebabs hot, with the refreshing mint sauce on the side.
  2. You can also serve the kebabs in pita bread or with a fresh salad for a light meal.

Enjoy this flavorful lamb kebab with the cooling mint sauce for a perfect balance of spice and freshness!
