Ingredients:
For the Lamb Kebabs:
500g ground lamb
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- ½ teaspoon smoked paprika
- ½ teaspoon chili flakes (optional)
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Wooden skewers (soaked in water for 30 minutes)
For the Mint Sauce:
- 1 cup fresh mint leaves
- ½ cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- Salt and pepper, to taste
Instructions:
Preparing the Lamb Kebabs:
- In a large bowl, mix together the ground lamb, chopped onion, minced garlic, parsley, cumin, coriander, paprika, chili flakes, salt, and pepper.
- Divide the mixture into 8 equal portions and shape each into a long kebab shape. You can use skewers to hold them or shape them into patties if preferred.
- Heat olive oil in a grill pan or on a barbecue over medium heat. Cook the kebabs for about 6-7 minutes per side or until browned and cooked through. Make sure to rotate them evenly for a nice sear.
Preparing the Mint Sauce:
- In a blender or food processor, combine the mint leaves, yogurt, lemon juice, garlic, salt, and pepper. Blend until smooth and creamy.
- Taste and adjust seasoning if necessary.
Serving:
- Serve the lamb kebabs hot, with the refreshing mint sauce on the side.
- You can also serve the kebabs in pita bread or with a fresh salad for a light meal.
